- 8 oz. mushrooms (brown Crimini, also called Baby Bellas or Baby Portobellas)
- 1 Tbsp. olive oil
- 1 lb. butternut squash (cut into pieces about 3/4 inches square, they don't all need to be the same size and shape)
- 1/2 tsp. salt
- ground black pepper

- 2 cups penne (or other similar pasta shape, I used Dreamfields Penne, which is a low-carb pasta)
- 1/2 cup scallions (diagonal sliced, green onions, green part only)
- salt (generous amount, for pasta cooking water, at least 1 tsp., The pasta doesn't absorb all that salt, but it will taste flat without it.)
- 2 oz. goat cheese (or slightly more, You can use Feta if you're not a fan of the more pungent goat cheese.)
- freshly grated Parmesan (for serving, optional)

This is a vertical simple, very good recipe. Lots of opportunities to add or change ingredients. I intend to try some variations in the future

One of our go to’s for a delicious meatless dinner! It’s so flavorful!! The one thing I do change when I make it is add the whites from the scallions part of the way through cooking the butternut squash, so they don’t go to waste.

This was really good! I did make one change and used spinach stuffed tortellini as the pasta. Very yummy.
