Eggs fluffed up with Hellmann's light mayonnaise, mixed with red bell pepper, courgette and aubergine

- 4 eggs
- 2 Hellmann''s Light Mayonnaise (dollops*)
- 1/2 red pepper
- 1/2 courgette
- 1/2 aubergine (small)
- 2 Tbsp. oil

Directions
- Cut the vegetables into cubes. Sauté them in a frying pan with the oil. When cooked, set aside.
- In a bowl, beat the eggs and whisk in the mayo. Add the vegetables to the egg mixture and mix well.
- Heat the frying pan and pour in the mixture. Cook the omelette until set and cooked to a nice golden colour.
