Eggs fluffed up with Hellmann's light mayonnaise, mixed with red bell pepper, courgette and aubergine

  • 2 Hellmann''s Light Mayonnaise (dollops*)
  • 1/2 red pepper
  • 1/2 courgette
  • 1/2 aubergine (small)
  • 2 tablespoons oil

    Directions

    1. Cut the vegetables into cubes. Sauté them in a frying pan with the oil. When cooked, set aside.
    2. In a bowl, beat the eggs and whisk in the mayo. Add the vegetables to the egg mixture and mix well.
    3. Heat the frying pan and pour in the mixture. Cook the omelette until set and cooked to a nice golden colour.
