- 2 garlic cloves (minced)
- 130 grams oyster mushrooms (| 4½oz, sliced thinly)
- 130 grams shiitake mushrooms (| 4½oz, sliced thinly)
- 3.5 oz. chestnut mushrooms (button, halved)
- 7 oz. quinoa (I used white, black & red quinoa)
- 1.25 liters vegetable stock
- 3.5 oz. fresh spinach
- 2 oz. hard cheese (grated, such as Grana Padano, check it is vegetarian)
- 1 Tbsp. chopped fresh thyme (finely)
- 1 Tbsp. fresh flat leaf parsley (finely chopped)
