- 1 onion (medium, diced)
- 2 cloves garlic (sliced)
- 1 inch ginger (piece of, sliced)

- 1 carrot (chopped)
- 2 tsp. Madras curry powder (homemade, if using store bought, use the mild version)
- 1 tsp. ground cumin
- 1/2 tsp. Garam Masala
- 1/2 tsp. ground turmeric
- 1/2 tsp. hot chilli powder (optional)
- 1 1/2 cups vegetable stock
- salt (to taste)
- 1 handful fresh coriander (to garnish, cilantro, optional)
- 1 lemon (small, halved, to squeeze over)
