- 4 red tomatoes (or large yellow, seeded and diced, juices reserved)
- 8 cups water
- 2 vegetable bouillon cubes
- 3 sprigs basil (or parsley)
- 2 Parmesan rinds (about 2 inches square each)
- 2 zucchini (medium yellow or green, cut into ¼-inch thick rounds)

- 10 oz. shells (macaroni, or other small pasta)

- 1/4 cup grated Parmesan (packed)

- 1 Tbsp. lemon juice
- 1/2 cup garlic (Pearls Specialties, Stuffed Queen Olives)
