  • 600 grams tofu (1.1 – 1.3 pounds plain white, *, see note below)

  • 4 leeks (baby, or spring onions, green parts only)
  • 4 tablespoons cooking oil
  • 1 tablespoon fermented black beans (rinsed and drained)
  • 2 1/2 tablespoons bean paste (Sichuan chilli)
  • 2 teaspoons red chillies (ground, optional)
  • 1 tablespoon ginger (finely chopped)
  • 1 tablespoon chopped garlic (finely)
  • 100 milliliters stock (or water)
  • 1/4 teaspoon ground white pepper
  • 2 teaspoons potato flour (or corn flour mixed with 2 tablespoons of cold water)
  • 1/4 ground roasted sichuan pepper
  • 1 tablespoon sichuan peppercorns
  • 3 tablespoons sea salt
