  • 3 1/2 ounces rice vermicelli noodles (soaked in boiling water for 5 mins, drained, cut into 3 inch pieces)
  • 4 spring onions (thinly sliced)
  • 1 medium carrot (grated)
  • 2 ounces pea sprouts (snow, trimmed)
  • 3 tablespoons cilantro leaves (fresh, chopped)
  • 13 1/2 ounces soy beans (rinsed)
  • 10 1/2 ounces corn kernels (rinsed)
  • 1/3 cup peanuts (finely chopped)
  • 1/4 cup lemon juice
  • 2 tablespoons sweet chili sauce
  • 2 teaspoons soy sauce
  • 2 teaspoons vegetable oil
  • 8 lettuce leaves (iceberg, trimmed)
  • lemon wedges (to serve)

    Directions

    1. Toss noodles with onions, carrot, sprouts, cilantro, soy beans, corn and peanuts. Season. Whisk together lemon juice, chili sauce, soy sauce and oil. Toss with noodle mixture. Distribute between lettuce leaves.
    2. Serve with lemon wedges.

    This is very delicious and quick! I will be adding avocado to the recipe and I substitute the soy sauce with Bragg's Liquid Aminos (a bit healthier and less sodium).
