- 1 cup chopped onion
- 1 green bell pepper (chopped)
- 2 cups mushrooms (chopped, ~10-12 cremini mushrooms)
- 7 oz. sausage (Lightlife Gimme Lean, crumbled)
- 2 cloves garlic (minced)
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 tsp. dried rosemary
- 1 bay leaf
- 1 dash red pepper flakes
- 2 tsp. dried parsley
- 2 Tbsp. tomato paste
- 1 qt. vegetable broth
- 29 oz. diced tomatoes
- 1/2 bunch lacinato kale (stems removed and chopped)
- salt and ground black pepper (to taste, start with ⅛ teaspoon of each and increase as needed)

Wonderful, will likely make again. Added 4 cups more water and 2 T more tomato paste due to cooking pasta in the broth instead of separately. Served with garlic bread. Forgot the ricotta, but it was amazing without. Also, I used 1 lb. regular sausage & cooked in with the hot broth.

Made this mostly according to recipe. Used veggie meatballs vs sausage and some gruyere vs ricotta. Really good hearty soup! Thank you

The great thing about this recipe is that it's easy to customize I used venison sausage instead of vegan sausage, Italian seasoning instead of the laundry list of herbs, and omitted the kale, and the results were amazing. Definitely saving this recipe to add to the repertoire
