  • 2 cups chickpeas (cooked)
  • 1 cup lima beans (frozen, thawed – 1 cup)
  • 2 carrots (chopped – large)
  • 1 green pepper (/Capsicum, chopped – large)
  • 1 potato (diced – large, optional)
  • 1 onion (chopped – large)
  • 6 garlic ((minced), large cloves)
  • 28 ounces crushed tomatoes (can (about 3 1/2 cups))
  • 8 ounces mushrooms (sliced –about 2 cups)
  • 1 cup corn (frozen)
  • 1 jalapeno pepper (no. (remove the seeds and ribs if you don’t want too much spice))

  • pepper (to taste)
  • 2 teaspoons chilli powder ((preferably ground chipotle or ancho for authentic flavor))
  • 2 teaspoons cumin seeds ((or 1 tsp ground cumin))
  • 2 bay leaf (dried)
  • 1 tablespoon Mexican seasoning ((optional, substitute with 1 tsp of dried Mexican oregano)*)
  • 1 tablespoon olive oil
  • 4 tablespoons cilantro (/Coriander leaves, chopped)
