  • lima beans (frozen, thawed – 1 cup)
  • carrots (chopped – 2 large)
  • green pepper (/Capsicum, chopped – 1 large)
  • potato (diced – 1 large, optional)
  • onion (chopped – 1 large)
  • garlic
  • cloves
  • 28 ounces crushed tomatoes
  • mushrooms (sliced – 8 oz, about 2 cups)
  • corn (frozen – 1 cup)
  • 1 jalapeno pepper
  • salt
  • pepper
  • 2 teaspoons chilli powder
  • 2 teaspoons cumin seeds
  • 2 bay leaf
  • 1 tablespoon Mexican seasoning
  • 1 tablespoon olive oil
  • cilantro (/Coriander leaves, chopped – 3-4 Tbsp)
  • sour cream
  • grated cheese (cheddar and pepper jack are my favorites)
  • avocado slices (or Prepared Guacamole)
