- 2 cans fire-roasted diced tomatoes (14.5 ounces EACH)
- 2 cans black beans (14.5 ounces EACH, drained and rinsed)
- 14.5 oz. pinto beans (1 can, drained and rinsed)
- 4 oz. diced green chiles (1 can, fire-roasted, optional)
- 1 cup frozen corn
- 1 cup vegetable stock (vegetable broth will work)
- 1 bay leaf
- 2 Tbsp. fresh lime juice

The blending part took a bit of faith from me but wow did it work out the consistency perfectly. This is an excellent veggie chili recipe and like any chili it stores well and is perfect to be portioned out. Low calorie, a meatless alternative when I want one, and easy to reheat during busy weeks. This is a winner.

Really tasty! I blended it a bit more than suggested but it was pretty easy to make and there is plenty of it

Super delicious! I didn’t have the green Chiles and Roasted tomatoes and it still came out flavorful. This Is a very filling meal for being low calorie will make again

Delicious! Everything in this recipe was spot on. Will make it again for sure.
Update: Made it again, added Kidney beans and used low sodium diced tomatoes. The whole family Loved it! it has just enough spice and heat (I can't tolerate too hot of spice), this is perfect.

Followed it mostly. Made a few changes, most notably I added a vegan ground beef crumble and some chipotle chile seasoning. Definitely will make regularly.

Oh my goodness this vegetarian chili was perfect, and taste awesome....this was the perfect meal during our Daniel fast!!!
