- 3 beetroot (large, peeled)
- 2 celery sticks
- 1 onion (large, peeled)
- 1 large carrot (peeled)
- 1 apple (small crisp, peeled, optional)
- 14 oz. chopped tomatoes (from a tin)
- 8 1/2 cups vegetable stock (I used 2 Kallo stock cubes)
- 2 bay leaves
- 1 pinch ground cloves
- 1 pinch ground allspice
- salt
- freshly ground pepper
- fresh dill (to garnish, optional)
- sour cream (to serve, about 2 tbsp per serving omit for vegan version)
- olive oil (a little, to drizzle)
