- 1/2 small yellow onion (large or 1, sliced into half moons)
- 2 cloves garlic (minced)
- 1 lb. beets (2 large beets shredded with a food processor or peeled and cut into matchsticks)
- 2 red potatoes (medium, cut into 1/4 inch cubes)
- 1 large carrot (cut into 1/4 inch cubes)
- 2 Tbsp. butter (omit and increase oil for vegan)
- 1 Tbsp. olive oil
- 1/2 head cabbage (red or white, sliced into small pieces)
- 4 cups vegetable stock
- 1 cup water
- 1 Tbsp. dill
- 7 Tbsp. white vinegar (add 5 and taste, add more if you like)
- 1 tsp. salt and ground black pepper (to taste)
- sour cream (use could vegan sour cream as well)
