Better at altitude to do the first step in a pressure cooker or use canned beans. If done in the pressure cooker DON'T DRAIN - POUR THE BEANS AND LIQUID INTO THE SLOW COOKER.
Ingredients

- 1 lb. black turtle beans (dried, picked over and soaked overnight in cold water to cover)
- 1 bay leaf
- 1 1/2 Tbsp. cumin seeds
- 2 tsp. paprika
- 1/2 tsp. cayenne pepper
- 1 tsp. marjoram (dried, or oregano)
- 3 Tbsp. olive oil
- 1 yellow onion (medium, finely chopped)
- 1 green bell pepper (medium, seeded and finely chopped)
- 4 cloves garlic (chopped)
- 1 Tbsp. chipotle chili in adobo sauce (chopped canned)
- 14 oz. chopped tomatoes (with their juice)
- 1 tsp. salt (or to taste)
- 1/2 cup chopped fresh cilantro
- shredded cheese (for serving)

Directions
- Drain the beans, put them in the slow cooker, add the bay leaf and chili powder, and cover with 3 inches of water. Cover and cook on HIGH until tender but not mushy, 2.5 to 3. hours. The beans can be prepared up to this point and refrigerated overnight.
- Heat a large cast-iron, or other heavy metal skillet. Add the cumin seeds, paprika, cayenne, and marjoram and shake the pan to lightly toast, about 2 minutes, until the seeds are a shade or two darker. Pour into a mortar and grind into a coarse powder with a pestle.
- Heat the oil in the skillet and cook the onion, bell pepper, and garlic, stirring, until softened, about 5 minutes. Transfer to the cooker along with the chipotles; stir to combine. Cover and cook on LOW for 8 to 9 hours.
- Stir in the tomatoes and salt. Cover and cook another 1 to 2 hours.
- Stir in the cilantro and serve in bowls.Put a layer of cheese on the bottom of each bowl, add the beans, top with sour cream and then with a sprig of cilantro, if you like.
