- 8 oz. tofu (drained, pressed, and cut into French fry sized strips)

I made the recipe with slightly different veggies and with edamame noodles instead of soba noodles it was delicious, but next time I’ll add a smaller amount of peanut butter to the peanut sauce (about 1tbsp less) and the amount of sauce in the recipe is a lot, can use half as much. Overall a keeper!
