- 4 Thai chilies (dried red, partially seeded and chopped)
- 1 piece ginger (peeled and chopped)

- 8 oz. buckwheat soba noodles
- 2 Tbsp. avocado oil (canola oil or peanut oil)
- 8 oz. tofu (drained, pressed, and cut into French fry sized strips)
- 1 eggplant (medium, cut into thin strips)
- 1 cup green beans (halved)
- 1 bok choy (medium, stemmed and sliced)
- 1/2 red bell pepper (seeded and thinly sliced)

I made the recipe with slightly different veggies and with edamame noodles instead of soba noodles it was delicious, but next time I’ll add a smaller amount of peanut butter to the peanut sauce (about 1tbsp less) and the amount of sauce in the recipe is a lot, can use half as much. Overall a keeper!
