- 1 Tbsp. pimentón (de La Vera, I used the “hot” variety but “dulce” works too)
- 1/2 tsp. dried thyme
- 1 tsp. ground turmeric
- 1 tsp. dried oregano
- 3/4 tsp. ground cumin
- 1/2 tsp. curry powder
- 2 russet potatoes (small, peeled and chopped)
- 1 1/2 cups cremini mushrooms (sliced)
- 1 turnip (small, peeled and chopped)
- 2 qt. vegetable stock
- 28 oz. crushed tomatoes
- 1 tsp. freshly ground black pepper
- 1 cup green lentils
- 2 cups kale (chopped green)
