- butter (Frylight I used, as it's the closest you'll get to ghee without enormously upping the syn/calorie count!)
- 600 grams beef (Lean casserole, cubed)
- 2 onions (large, finely diced)
- 6 garlic cloves (minced)
- 50 grams root ginger (minced)
- 1 tsp. chilli flakes (This can be adjusted according to personal taste - I actually used Bird's Eye Chilli Flakes, but my husband and I like a bit of heat to our food.)
- 10 cardamom pods (gently split open under the blade of a solid knife)
- 1 1/2 Tbsp. ground cumin
- 1 1/2 Tbsp. ground coriander
- 1/2 Tbsp. turmeric
- 2 lamb stock
- 900 mL boiling water
- 400 grams chopped tomatoes
- 4 Tbsp. tomato puree
- 2 Tbsp. sweetener (Granulated)
- 5 carrots (medium-sized, peeled and cut into 1cm thick rounds)
- 1 sweet potato (large, peeled and cut into roughly 1cm cubes)
- 200 grams red lentils
- 1 courgette (medium, cut in half lengthways, then cut into thin half rounds)
- 200 grams button mushrooms (halved)
- 100 grams spinach
- salt
