- 3/4 cup shredded carrots (I used organic pre-shredded carrots)
- 1 small yellow onion (diced)
- 3 Tbsp. tamari soy sauce (Organic)

- soy sauce
- 1 cup mushrooms (white or baby bello, sliced)
- 1 cup spinach leaves (can be substituted with kale)
- 2 cloves garlic (minced)
- 1 tsp. ginger (minced)
- 3 Tbsp. sesame seed oil (I used toasted)
- 1/2 tsp. sesame seeds (optional)
- 1/2 tsp. garlic salt
- sea salt (optional)
- pepper (optional)
