    This Zucchini Bread recipe was good. I substituted a few ingredients. I used chia seeds instead of flax seed and pumpkin spice instead of cinnamon. Instead of sunflower oil I used grapeseed oil. Basically, I used what was in my pantry. I also added fresh whole cranberries. I turned out great. I would used this recipe again.

    Incredible. Subbed almond milk for water and baked them in cupcake molds. Important to remember to reserve the zucchini water, and chocolate chips were a delicious sub for the walnuts.

    Divided into 2 bread loaf pans and added vegan chocolate chips on top. Tastes great!
