- 1 tsp. maple syrup

- 2 Tbsp. flour (I used GF flour)
- 1 sheet puff pastry (vegan)
- 1 Tbsp. soy (or other thin plant milk, to glaze)
- coarse sea salt (optional)
- sesame seeds (optional)
- poppy seeds (optional)

- 15 grams dried porcini mushrooms (well rinsed)
- 4 chestnut mushrooms (or button, sliced)

- 3 sprigs rosemary
- 1 bay leaf
- 1 tsp. miso paste
- 1 Tbsp. nutritional yeast
- 240 mL wine (white, or red)

- 1 tsp. sugar
- 2 tsp. cornflour (or cornstarch, dissolved in 1 tbsp water)
- 600 grams button mushrooms
