- 5 oz. sliced mushroom (thinly)
- 1 Tbsp. soy sauce (tamari for gluten-free)
- 2 cups water (or broth)
- 1/4 tsp. salt (omit if using salted broth)
- 6 oz. wide rice noodles (Thai style dry noodles)
- 1/2 bell pepper (green or red or both)
- 1 cup broccoli (chopped, broccolini or Chinese broccoli)
- 2 1/2 Tbsp. soy sauce (tamari for gluten-free)
- 1 tsp. molasses
- 1 Tbsp. fish sauce (vegan, or 1 tablespoon vegan oyster sauce)
- 2 tsp. brown sugar
- 1 tsp. corn starch (or tapioca starch)
- 1/8 tsp. white pepper
- 2 Tbsp. Thai basil
- chopped green onion (for garnish, optional)
- wide rice noodles (For this recipe, I recommend, or other Thai-style dry noodles. You find them in the Asian section of your grocery store)
