- 100 grams soya chunks (dried, or soy curls, soaked in water for 10-15 mins)
- 200 grams extra firm tofu (c.7 oz, drained, pressed, and cut into cubes)
- 300 grams potatoes (c.10½ oz cooked, cut into bite-sized chunks)
- 4 Tbsp. peanuts (crushed)
- 400 mL coconut milk (c.1⅔ cups/13½ fl oz)
- 2 Tbsp. tamarind paste (or home-made tamarind sauce, note 3)
- 1/2 tsp. sea salt
- 1 1/2 tsp. coconut sugar
- 2 cardamom pods
- 1 whole star anise
