- 1/2 cup olive oil
- 2 tsp. baking powder
- 1 tsp. salt

- 3 garlic cloves (minced)
- 1/2 yellow onion (diced)
- 1 cup diced tomatoes (drained)
- 2 cups brown lentils (cooked, canned or freshly cooked)
- 14 oz. jackfruit (young, shredded)
- 1/2 cup juice (from the diced tomatoes)
- 1 tsp. ground cumin
- 3/4 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/2 cup raw cashews (Fair Trade, soaked for 30 minutes in hot water)
- 1/2 cup warm water
- 1 chipotle chili (from a can in adobo sauce, diced)
- 1 Tbsp. coconut yogurt (unsweetened)
- 3 tsp. freshly squeezed lime juice
- 1 dash salt
