- 5 Tbsp. water
- 1 1/2 Tbsp. tamarind concentrate (you can sub with balsamic vinegar but use less of it)
- 2 1/2 Tbsp. low sodium soy sauce (use tamari to make it gluten-free)
- chilli flakes (to taste)
- 1/2 stock cube (mushroom, crushed, don’t omit!)
- 3 glugs oil (sunflower seed, or other neutral vegetable oil)
- 1 eggplant (smallish, core cut out and chopped into large pieces)
- 1 red bell pepper (small, chopped into medium pieces)
- 2 Tbsp. pepitas (shelled pumpkin seeds)
- 2 spring onions (large, halved then sliced)
- 2 garlic (big cloves, halved then sliced)
- 210 grams kidney beans (tin of cooked, about 3/4 cup)
- 1 tsp. potato starch
- 1 tsp. cold water
