  • 2 cups mushrooms (diced)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 can chickpeas (mashed)
  • 1 cup bread crumbs (such as Panko)
  • 1/4 cup nutritional yeast
  • 1/4 cup parsley (chopped)
  • 1 Flax egg (1 Tbsp ground Flaxseed + 3 Tbsp Water, refrigerate for 5 minutes)
  • 1 tablespoon tamari (or Soy Sauce)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 pinch salt (and Pepper.)
  • 1/2 cup cashews (soaked for 4 hours or overnight.)
  • 1 cup water
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon tamari (or Soy Sauce)
  • 1 teaspoon Dijon mustard
  • 4 tablespoons vegan butter
  • 2 tablespoons flour
  • 2 cups vegetable broth

    Amazing! It’s a bit labour-intensive but so good! I replaced the flax egg with a regular egg and also substituted butter with olive oil, then thickened the sauce with a little cornstarch. Turned out great.

    Excellent! Had to add a little cornstarch to thicken. Sauteed mushrooms, leeks and garlic. Used Impossible meatballs and made the sauce- wow!!

    This was delicious! The sauce was a good thickness with only 1 & 3/4 cups of the veggie broth used. Served on 50/50 mashed cauliflower/potatoes. Next time I will add some sautéed mushrooms to the meatball & sauce mixture. Also did not soak the cashews or strain because I have a Vitamix.

    This was very good! And I even forgot to sauté mushrooms and onions just mixed it all in raw and baked and they still came out great! Great sauce served with edamame spaghetti . Thanks!

    OMG!!! Better than IKEA! Back in my meat eating days I loved the Swedish meatballs over egg noodles. I made this tonight for some comfort food and WOW! Soooo good!
