- 2 Tbsp. seasoned rice vinegar
- 1 sheet seaweed (cut into small pieces)
- 2 cups edamame (shelled, thawed from frozen)
- 6 radishes (sliced)
- 2 carrots (cut into matchsticks)
- 1/2 English cucumber (long, cut into rounds or matchsticks)
- 1/4 cup vegan mayonnaise (or regular mayo for non-vegan)
- 1 tsp. Sriracha (or more if you like it spicy)

Lovely and delicious! I used brown basmati rice instead and when finished cooking added some rice vinegar and soy sauce! Will definitely be adding this into my lunch rotation!
