- 1 Tbsp. maple syrup (agave, or organic sugar)
- 2 tsp. lemon juice
- 1 cup cashews
- 2 Tbsp. agave
- 1/2 cup water
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 3/4 cup soy milk
- 2 tsp. apple cider vinegar
- 2 cups spelt flour (or gluten free, all-purpose flour, I use Bob's Red Mill Gluten Free 1-to-1 Baking Flour)
- 6 Tbsp. organic cane sugar
- 1 Tbsp. baking powder
- 1/4 baking soda
- 1/4 tsp. salt (use ½ teaspoon salt if you're using coconut oil, rather than buttery spread)
- 6 Tbsp. buttery spread (vegan, like Earth Balance or coconut oil)
- 1 tsp. vanilla
