- 1 1/2 cups water
- 1/4 cup soy sauce (*use gluten-free or **use coconut aminos)
- 1/4 cup seasoned rice vinegar
- 1 tsp. sweetener
- 2 Tbsp. vegan chicken flavored bouillon
- 1/2 tsp. red pepper flakes
- 1 bell pepper (cored and diced)
- 5 oz. mushrooms (diced)
- 1 can water chestnuts (8 ounces, or 225 g, drained and diced)
- 1 pkg. seitan (12 ounces, or 335 g, store-bought or homemade, diced, *sub 1½ cups chickpeas, cauliflower florets, or pressed tofu)
- 3 Tbsp. cornstarch
- 2 Tbsp. sesame oil (***leave out to make oil-free)
- steamed rice (for serving)
- chopped peanuts (for serving)
