- olive oil (for frying)
- 1 onion (very finely chopped)
- 1 cup puy lentils (pre-cooked, if you prefer)
- 4 scallions (spring onions, chopped into ¼ inch slices)
- 2 Tbsp. sweet chilli sauce (available from here in the US, or UK)
- 1 Tbsp. mustard (I use French’s brand – available from here in the US, or UK and yes it’s vegan http://www.frenchsuk.co.uk/pages/faq)
- 1/4 tsp. chilli powder (available from here in the US, or UK)
- 2 chillies (baby, finely chopped)
- salt (to taste)
- 2 tsp. dark brown sugar (or other of your choice)
- 1 Tbsp. tomato ketchup
- 2 tsp. tomato paste
- 1 cup chopped tomatoes (finely, or tinned is fine)
- 2 tsp. cider vinegar

I made it using green lentils, turned out pretty good, I would definitely make it again. Read the directions all the way through; the beginning of the recipe says to sauté half the onions, then references the scallions at the end without clarifying what to do with the half of the onions not sautéed in the beginning.

Delicious recipe! I used meatless crumbles instead of lentils, and it was terrific! Just the right amount of spice.

This recipe is delicious. If you’re looking for a meatless sloppy joe recipe this one is it. The flavor is so classic! We use 1c dry brown lentils and half a large yellow onion. It makes a lot and the leftovers are also great.
