Directions
- Mushroom layer: -heat oil & garlic in pan on med heat until garlic browns -add onions, mush & salt - cook until mushies shrink & brown -pour mush layer into 27x19cm oven-safe casserole dish
- Squash layer: -heat oil, add squash, zucchini & salt -stir and cook until veggies become soft/begin to brown -add this layer on top of mushroom layer in dish
- Quinoa layer: -bring water to boil, add quinoa -reduce heat to low, cover & cook 10 mins or until liquid evaporated -add this layer on top of squash in dish
