I don’t cook w/ oil, so omitted olive oil and the vegan butter. Also I omitted the sea salt- only used the miso & gluten free tamari - no need for the sea salt plenty of flavor from the vegetable broth & seaweed!

First time I tried mushrooms as scallops. Delightful. I didn’t bother with the garlic sauce as I was using the scallops to top another dish.

The texture of these is quite extraordinary and so similar to scallops. This is an easy dish to prepare and I served alongside a pasta walnut garlic artichoke dish. They were very good. I trimmed the mushrooms and skinned the woody side pieces as I saw in another video. Also, I will score them next time to really look like seared scallops.

Delicious! Such a surprising doppelganger for scallops and I only marinated them for 15 minutes! Can't wait to try an overnight marinade and serve over pasta.
