- 2 Tbsp. beet juice (or natural vegan food dye)
- 1 Tbsp. coconut oil (plus extra for greasing the waffle iron)
- 1 tsp. pure vanilla extract
- 1/3 cup vegan cream cheese
- 4 Tbsp. vegan powdered sugar (sifted, depending on your sweetness preference)
- 1 Tbsp. fresh lemon juice
- 1/2 Tbsp. non dairy milk (I used cashew milk)
- 1/4 tsp. pure vanilla extract
- vegan dark chocolate (chopped)
