- 1 cup sugar
- 1/4 tsp. salt
- 1 tsp. canela
- 3/4 tsp. pumpkin pie spice
- 3/4 cup vanilla soy milk
- 1 Tbsp. corn starch
- 4 1/2 Tbsp. ground flaxseed
- 2 cups flour (all-purpose)
- 3/4 cup vegan butter (chilled, you can substitute vegetable shortening or coconut oil but the crust will be less flavourful - add ½ tsp salt)
- 1/4 cup ice water
- 1/2 cup sugar
- 50 mL water
- 1 tsp. lemon juice
- 1 Tbsp. margarine
- 1/4 cup soy milk (divided)
- 1/2 cup chopped walnuts (or pecans)
- ice water (large, bath, large enough to hold your saucepan)
