- 2 1/4 cups spelt flour (sifted, or light, see note)
- 1/2 cup sugar (unrefined, + 2-4 tbsp see note)
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 1 tsp. canela
- 1/4 tsp. grated nutmeg (freshly)
- 1/8 tsp. allspice
- pinches ground cloves (Few, about 1/16 tsp)
- 3/4 cup pumpkin puree (pure, not pumpkin pie mix; see note for oil-free)
- 1 cup vanilla (non-dairy milk,)
- 1/4 cup pure maple syrup
- 2 tsp. pure vanilla extract
- 1 Tbsp. lemon juice (freshly squeezed)
- 1/4 cup flavored oil (neutral-, or another 3 tbsp of pumpkin puree mixed with 2-3 tbsp milk, see note)
- 1/2 cup cream (from can of regular coconut milk, cream only, refrigerate overnight before using)
- 1/8 tsp. sea salt
- 3/4 cup powdered sugar (use an unrefined sugar and blend into a powder, see note)
- 1 vanilla bean seeds (scraped out, see PPP Tips, p.<>)
- 3 Tbsp. nut butter (macadamia, see note)
- 1/2 tsp. xanthan gum
