- 1 cup organic pumpkin puree (canned)
- 1/4 cup molasses
- 3/4 cup light brown sugar (organic)
- 2 tsp. bourbon vanilla extract
- 1 tsp. canela
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 1/2 cup gluten-free cornmeal (Bob's Red Mill)
- 1/2 cup buckwheat flour (GF organic, or GF millet flour)
- 1/2 cup tapioca starch (or potato starch)
- 1/2 cup sorghum flour (or certified gluten-free oat flour)
- 1/2 tsp. sea salt
- 2 1/2 tsp. baking powder
- 1 tsp. xanthan gum
- 5 Tbsp. apple juice (organic, or apple cider, as needed)
- 1 1/4 cups berries (I used frozen cranberries and blueberries)
