Description

This recipe was inspired by a good friend who follows a vegan diet. She was, and is, always looking for ways to vary and increase her protein intake. The result is an easy, delicious, non-time consuming, nutrient rich recipe (whew!) that could fit her vegan needs and be happily consumed by my children (who can be very picky eaters).

Ingredients

  • 1/2 cup Mike's Mix Pure Vegan Protein
  • 1/4 cup Mike's Mix Raw Black Chia Seeds
  • 1/4 cup Mike's Mix Ground Flax Seed
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 8 tbsp water
  • 1 cup of dates (or fruit of your choice)
  • 3 tbsp Honey (or sugar of your choice, or eliminated)

    Directions

    1. Pre-heat oven to 350 degrees
    2. Combine protein, flax, chia seeds, baking soda and baking powder in a small bowl
    3. Slowly add water and honey, mix as you do so
