- 1/2 tsp. crushed red pepper (less to taste)

- 2 Tbsp. tomato paste
- 1 1/2 lb. potato (Little, Company Creamer potatoes, I used Blushing Belle, cut into 1/2-inch pieces)
- 7 cups low sodium vegetable broth
- 14 oz. Great Northern beans (drained & rinsed)
- 4 cups chopped kale
- 1/2 tsp. salt (or to taste)

I used 1/2 red potato, 1/2 sweet potato which tasted good. I left out celery bc I was out and should have picked some up. I will make it again with a few modifications.

This was delicious! I did do a couple things differently (collective sigh*) - I know a lot of purests hate when people mess with a recipe but here’s what I did: First, make sure you use good quality vegetable broth if not using homemade, I used boxed. I had two kinds and did a taste test I had Swanson and also Imagine organic. Huge difference in flavor . The Swanson was pretty colorless and tasteless . The Imagine had a lovely deep color and good flavor . Secondly, when the potatoes were cooked through and the beans had been added but NOT the kale, I removed 2/3 of the bean, potato, vegetable mixture with a slotted spoon and set it aside. I then used my Immersion blender set into the soup pot to blend the remaining ingredients until smooth. This thickened the broth nicely. Once that was blended I added the “removed” potatoes, beans and vegetables and added them back to the soup pot. At this point I added the kale (I used organic baby kale and didn’t bother chopping it). I served ours with some Parmesan cheese . As the recipe stated, you can always change up the beans and vegetables but we like this just as it is, however, I would have liked a couple more carrots in it . I also doubled the recipe so we could have extra for another dinner and or lunch. My husband loves this soup. He said he likes it better than classic minestrone and he’s Italian 😊 Buon Appetito!
Updated (April 2018) I made this again and decided to use some chicken in the soup. Since I was using chicken I added half chicken broth/half vegetable broth and also added more carrots, otherwise the ingredients were the same . I did not blend any of the ingredients with the Immersion blender this time. Still 5 stars
