- 2 1/2 lb. baby potatoes (cut in half or fourths, largely dependent on size of potatoes boiled until tender)
- 2 celery stalks (large, medium dice)
- 2 large carrots (grated)
- 1/4 red onion (large, small dice)
- 1 1/3 cups bell peppers (assorted, red, orange, and yellow, small dice – measure after dicing the bell peppers)
- 1 cup vegan mayonnaise (Cashew, – see recipe)
- 3 Tbsp. apple cider vinegar
- 1/4 tsp. sweet paprika
- 1 tsp. celery seed (+/- to taste, I like more, Monkey likes less)
- 1 tsp. sea salt (+/- to taste)
- 8 freshly ground pepper (cracks, +/- to taste)
- bell peppers (Assorted, small diced)
- red onion (small dice)
