- 1 onion (medium, roughly chopped)
- 1 chunk ginger (about 8 cm / 3 inches, roughly chopped)
- 3 star anise
- 3 cloves
- 2 cinnamon sticks
- 1 tsp. coriander seeds
- 5 cloves garlic (roughly chopped)
- 700 grams mixed vegetables (and/or vegetable scraps for stock, I had carrots, turnips, parsnips, celery tops and leek – see photo, roughly chopped)
- 3 dried shiitake mushrooms
- 3 liters water
- seasoning (Maggi Liquid, or soy sauce, to taste, I added about 1 ½ tablespoons)
- 1 1/2 tsp. salt (to taste)
- 3 Tbsp. neutral oil (divided)
- 200 grams extra firm tofu (mashed with a fork)
- 2 Tbsp. soy sauce
- 1 tsp. miso paste
- 1 tsp. rice vinegar
- 1 tsp. paprika (smoky)
- 3 green onions (very thinly sliced into matchsticks and white and light green parts separated from dark green parts)
- 1 head bok choy (leaves separated and larger ones chopped)
- 250 grams wide rice noodles
- 200 grams bean sprouts
- 1 bunch cilantro (and/or basil, Thai basil if you can get it)
- 1 lime (quartered)
- 1 red chili pepper (long, sliced)
