- 1 stalk celery (diced)
- 2 Tbsp. flat leaf parsley (chopped, or sub cilantro)
- 1/4 cup green onions (chopped)
- 3 Tbsp. Tahini (I like Soom Foods)
- 2 tsp. pure maple syrup (or use honey if not vegan)
- 1 tsp. Dijon mustard
- 1 tsp. apple cider vinegar
- 1/4 tsp. garlic powder
- 1/4 tsp. salt (plus more to taste)
- freshly ground black pepper (Lots of)
- 3 Tbsp. warm water (to thin dressing)
- 3 spinach tortillas (large, or tortillas of choice*)
- 4 cups spinach (organic)
- 3/4 cup shredded carrots
