- 10 oz. cremini (or other mushrooms, see notes above)
- 1 knob ginger (about an inch long, peeled)
- 1 Tbsp. olive oil
- kosher salt
- 1 pinch crushed red pepper flakes (or more to taste)
- 1/4 cup mirin
- 1/3 cup soy sauce
- 3 scallions (white and green parts, finely sliced)
- 1 Tbsp. sesame seeds
- 2 tsp. sesame oil
- hot sauce (such as Sriracha, for serving)
