  • 1/2 onion (thinly sliced)

  • 2 pounds brown mushrooms (or white, or a mix of mushrooms such as 4 Portobello mushrooms, 1 pound white mushrooms, and 1/2 pound shitake mushrooms, chopped)
  • 14 ounces diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon garlic powder
  • 1 1/2 tablespoons paprika
  • 6 sprigs fresh thyme

    This was delicious! With canned diced tomatoes I used less broth and added 2 bay leaves. Served over rice.

    Turned out great! I too used fresh garlic as many suggested. I made a few mods...I added 2 roasted red peppers, instead of 2 tbsp of paprika I used 1, and 1 tbsp of berbere spice for a little heat. Also used a variety of mushrooms, portobello, cremini and shiitake.

    lovely winter meal. i used 2 bay leaves due to not having thyme and it's lovely. strong in paprika flavor but i enjoy the taste. will keep making this in the future. served it over polenta.

    Really nice! So flavourful
    This was fantastic! I added oregano like another person suggested, and made it vegetarian instead by using butter because I was out of oil.

    completely disregarded the "vegan" part of this dish. used a small can of rotel (hot), decreased the amount of chicken broth, added oregano, had to use a thickening agent bc of the liquid from tomatoes. very tasty!

    Nice and hearty overall, unfortunately white mushrooms (I did 3/4 white and 1/4 brown) are not very flavourful, but I will simply use a different type next time!

    I used browning sauce in the mushrooms which added depth. Served over buttery egg noodles and sprinkled with a little red pepper flakes

    Was a good base but I had to add lots of my own spice to make it a delicious meal. I highly suggest it either cauliflower rice.

    I love paprika so this was right up my alley. It was absolutely delicious! I had no problem with it being watery, as some reviews said, because I took my time and let it simmer and thicken. I made some eggless noodles and stirred those into the goulash at the end. Will definitely be making again - it was soooo good.

    Scaled back the paprika, added pepper, munched garlic, and chipotle powder. Could probably add some tomato sauce and use this on a pasta.
