- 1 1/2 cups pimento (green olives -, stuffed, chopped)
- 1 1/2 cups Kalamata olives (pitted and chopped)
- 1 can black olives (15 ounces black olives, drained and chopped)
- 1 oz. red bell pepper (pieces)
- 1/2 cup roasted red bell pepper (chopped)
- 1/2 cup mixed vegetables (Italian, chopped - giardiniera comes in a jar)
- 2 oz. cheese slices (vegan white)
- 2/3 cup oil (your choice, I used avocado oil but extra virgin olive oil is also great)
- 1 cup flat leaf parsley (fresh chopped)
- 2 Tbsp. capers
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 oz. seitan (sliced thin)
