I reduced the sugar to 2 Tbsp, subbed the spelt flour for a combo of whole wheat and oats, subbed maple syrup for more molasses. Quick and delicious! Tender cookies with a slight crisp on the outside.

good!- soft, but hold their shape well. extra step to roll them in sugar is worth it.
