- 1 oz. dried shiitake mushrooms (soaked in 3 1/2 cup water for at least 30 minutes)
- 7 oz. button mushrooms (finely chopped)
- 2 Tbsp. vegetable oil
- 1 Tbsp. garlic (peeled and minced)
- 1 Tbsp. ginger (peeled and minced)
- 1 leek (large, sliced in half lengthwise and thinly sliced on the bias)
- 1 lb. silken tofu (soft drained and sliced into 1-inch cubes)
- 1 Tbsp. Szechuan peppercorns (optional, I prefer not to because they numb my tongue)
- 2 Tbsp. gochujang
- 2 Tbsp. soy sauce
- 3 Tbsp. chili (spicy, crisp)
- 1 tsp. kosher salt
- 1 tsp. gochugaru
- 2 1/2 Tbsp. cornstarch (mixed with 2 1/2 tablespoons water)
