- 2 medium tomatoes (400 g / 14 oz)
- vegetable oil (for frying)
- 2 onions (small, diced finely)
- 2 large garlic cloves (diced finely)
- 5 cms ginger (/ 2 ” piece of, peeled and diced finely)
- 1 tsp. black mustard seeds
- 24 curry leaves (fresh or dried, I used dried)
- 1/2 tsp. fenugreek seeds
- 1/2 tsp. turmeric
- 2 tsp. hot chilli powder
- 2 tsp. ground coriander
- 1/2 Tbsp. tamarind paste
- 240 mL full fat coconut milk
- 1/2 cauliflower (small, divided into florets)
- beans (a handful of green flat, sliced thinly, on the diagonal)
- 50 grams fresh spinach
- 1 cup chickpeas (cooked)
- 3/4 tsp. fine sea salt (adjust to taste)
- 2 tsp. sugar (I used coconut)
- rice (favourite, to serve)
- toasted cashews (to serve, optional)
- fresh coriander (to serve, optional)

Nice dish! I had never used curry leaves before, but found some dried ones on Amazon to use. A few of the larger ones were a little fibrous in the dish, so I may chop them up next time. I didn’t have any tamarind paste so I used some pomegranate molasses to try to replicate the slightly sweet/tart flavor.
