- 2 cups tvp (vegan mince, I used the Yves brand or rehydrated)
- 1 onion (medium, chopped)
- 1 garlic clove (minced)
- 1 Tbsp. coconut oil (or cooking oil of choice)
- 1/2 tsp. nutmeg
- 8 oz. tomato sauce
- 3 medium tomatoes
- 3 cups soy milk (or non-dairy milk of choice)
- 3 Tbsp. flour (all-purpose, use cornstarch or arrowroot powder if GF)
- sea salt
- black pepper
- 1 Tbsp. vegan butter (optional)
- 1/2 cup mozzarella (vegan, shreds, optional)
- 2 Tbsp. fresh parsley (chopped, for garnish, optional)
