- 1 yellow onion (finely chopped)
- 3 garlic cloves (minced)
- 3 carrots (peeled and finely chopped)
- 8 oz. cremini mushrooms (diced)
- 2 cups celery root
- 1 celeriac
- 3/4 cup brown lentils (uncooked, rinsed and picked over)
- 3 Tbsp. tomato paste
- 1 Tbsp. worcestershire (vegan)
- 1/2 cup dry red wine (such as cabernet or merlot)
- 1/2 cup vegetable broth
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 4 cups russet potato (peeled 1-inch, cubes, about 2 large russet potatoes)
- 2 cups parsnips (peeled and chopped, about 4 parsnips)
- 3 Tbsp. vegan butter (I like Miyokos)
- 1/4 cup non dairy milk (unsweetened plain, I like using plain coconut milk in a carton)
- 1 tsp. garlic powder
- salt
