- 1 1/4 cups cashews (soaked for at least 2 hours if you don't have a high speed blender)
- 5 cups warm water
- 3/4 cup tapioca starch
- 1 1/2 Tbsp. olive oil
- 1 1/2 Tbsp. lemon juice
- 1 1/2 tsp. salt
- 1 cup water
- 2 cups coconut sugar (normal sugar will work fine as well, but brown sugars give it the caramel color)
- 1 tsp. lemon juice
- 1 Tbsp. orange blossom water
- crushed pistachios
