- 4 cardamom pods (– remove the pods to leave just the seeds)
- 2 cloves garlic
- 1 tsp. curry powder
- 1 tsp. soybean paste (fermented)
- 4 Tbsp. water
- 200 grams rice noodles (flat)
- 600 grams sweet potatoes (~2-3 potatoes – peeled and chopped into bite-size chunks)
- 400 mL coconut milk
- 750 mL vegetable stock (vegan chicken stock also works well)
- 400 grams extra firm tofu (– chopped into bite-size chunks)
- 1 Tbsp. sugar
- 2 Tbsp. fish sauce (vegan, or soy sauce)
- 100 grams spring greens (– roughly chopped)
