Made this dish a few times already. It’s fairly easy to make. I do omit the last few steps. Instead of cooking the noodles with all the veggies and sauce, I actually just mix it altogether without heat. Tofu comes on last when serving because when I mix it in, the tofu is all mashed up.

We loved this dish! I was unable to find sweet potato noodles but it was delicious with plain rice noodles. I’m saving this one, would definitely make it again.

Sauce tastes like its missing something but i cant place what.... overall this is a good authentic style dish.
